Banana And Walnut Cake
My wife, Linda’s banana and walnut cake is so easy to make and absolutely delicious in the afternoon with a cup of tea. I also have it for a bit of an energy boost pre-workout with a strong coffee.
Ingredients
200g wholemeal spelt flour, plus extra for dusting
100g sultanas
1 1/2 teaspoons of ground cinnamon
2 teaspoons of baking powder
1/2 teaspoon bicarbonate of soda
120ml of organic coconut oil
150g of honey
2 large eggs
2 medium, well ripened bananas
70g walnuts , crushed by hand
Method
Start by preheating the oven to 150 celsius or gas mark 2. Lightly grease a baking loaf tin with a little bit of the coconut oil and dust with some spelt flour.
Add the sultanas to a small pan and cover with water. Bring to the boil, turn off the heat and set aside until you need them.
Melt the coconut oil and allow to cool in a jug. Put the spelt flour, cinnamon, baking powder and bicarbonate of soda into a large bowl and mix together. Then add the honey and eggs to the jug with the coconut oil. Finally use a blender to purify the bananas and add them to the jug with the honey, eggs and coconut oil.
Pour the contents of the jug into the bowl with the flour and mix until smooth. Drain the sultanas and add them to the bowl with the walnuts.
Pour the mixture into the baking loaf tin and put in the preheated oven for around 1 hour. It should be dry in the middle when cooked so you can test with a skewer.
