Bahn Mi Salad With Pork
Banh Mi is a delicious Vietnamese sandwich that should be fresh, crunchy and zingy.
This is my alternative, which looses the bread to be as healthy and nourishing as possible, giving improved energy and focus while keeping the essence of the dish.
This recipe will make 2 generous portions.
Ingredients
500g of pork loin sliced into ½ inch pieces
3 cloves of garlic, pressed
4 tablespoons of fish sauce
1 teaspoon of black pepper
Sea salt to taste
½ a white cabbage, grated
3 carrots, grated or use a julienne Peeler
1 small onion, sliced
1 cucumber, use a julienne peeler
Large handful of fresh mint leaves, chopped
Large handful of fresh coriander leaves, chopped
Chopped chili to taste
Juice of 1 lime squezzed over the salad
Method
Put the pork, garlic, fish sauce, black pepper and salt into a bowl and cover to marinate.
Combine all the vegetables and herbs in a large bowl. Squeeze the lime over the salad with a little olive oil if you like.
Heat several tablespoons of coconut oil in a pan over a medium heat. Add the pork, and fry for 3-4 minutes on each side or until lightly browned.
Remove the pork from the pan and serve with the salad.
If you are hungry and need more calories try adding some cashew nuts and olive oil to the salad.
