Fruit & Nut Pancake
The fruit & nut pancake has been one of my breakfast or lunch staples for well over 8 years now.
I like to train fasted and find the combination of carbohydrate, fat and protein in this pancake is a perfect post workout meal. The other reason is it’s absolutely delicious!!
The recipe below will make a pancake for 1 person.
Ingredients
1 small teaspoon of coconut oil
1 medium sized, ripe banana
2 large free range eggs
Flesh of half of a small coconut, grated or put through a blender
Large handful of blueberries
Large handful of pecan nuts
Method
First heat a large frying pan over a low flame.
While the frying pan is heating up mash the banana so that it is nice and creamy. Then add the eggs and mix.
Once the pan is hot, add the coconut oil. Be careful not to leave the oil in the pan so long that it starts to smoke.
Pour the banana and egg mix into the pan. keeping it on a low flame. Using the handle of the pan circle the pancake mixture so that it is even and reaches the edges of the pan.
While the pancake is cooking add the grated or blended coconut flesh and blueberries.
After five minutes or so use a spatula to flip the pancake in half to help it cook inside.
When ready serve the pancake sprinkle over some pecan nuts with any more coconut and blueberries you may want.
