Lentil, Chickpea and Quinoa curry
This recipe sums up what nourishing food is all about. Full of spices, healthy fats, vegetables with a balance of carbohydrate to protein. Most of all though it makes you feel good and nourishes the soul.
Ingredients
1 teaspoon of coconut oil
1 can of chickpeas
1 courgette, chopped
2 carrots, chopped
2 handfuls of spinach
3 cloves of garlic, finely chopped
1 tablespoon of yellow curry powder
½ teaspoon of turmeric
½ teaspoon of ground cumin
½ teaspoon of ground coriander
½ cup of quinoa
½ cup of red lentils
1 liter of vegetable stock
1 can of coconut milk
Method
Heat the coconut oil in a pan or wok over a medium heat. Add the chickpeas, courgette, carrot, garlic and spices and fry for 5 mins or so. Be careful not to let the garlic burn.
Add the stock, spinach lentil and quinoa and simmer for 20 minutes
Add the coconut milk and simmer for another 10 minutes.
Season with salt as you like and serve.
