Vegan Quinoa Bowl
When you need to make a quick meal this basic but nourishing vegan quinoa lunch bowl is perfect. It keeps well in the fridge and can be eaten hot or cold making it ideal as part of a meal prep plan.
The ingredients listed are just my suggestion and what I typically use. Of course add any veggies to the quinoa that you like and think will work well together. I often add a spicy sauce too, which helps satisfy my taste buds.
The ingredients I’ve listed should make enough for two people.
Ingredients
1 cup of quinoa
2 cup of water
1 vegetable stock pot
1 teaspoon of coconut oil
1 red or white onion, chopped
1 red chili, chopped
2 large handfuls of kale
2 handfuls of mushrooms, chopped
1 large handful of cashew nuts
Method
Put the quinoa, water and vegetable stock pot in a pan and bring to the boil. Once boiling turn down to a simmer for around 15 minutes. Then leaving the lid on, take the pan off the heat to allow the quinoa to slowly cook until fluffy.
While the quinoa is simmering heat a frying pan with the coconut oil. Once hot add the onion and fry for around five minutes before adding the chili. after an other 5 minutes of frying add the mushrooms and kale. allow to fry for a further 5 minutes before adding the cashew nuts.
Once the quinoa is cooked add to the frying pan and stir it in with the veggies.
Serve with some spicy sauce.
