Banana & Blueberry Pancake

I've been eating banana pancakes for breakfast on and off for years. They keep me full, are so easy to make and work well when trying to stay lean.

Some people have difficulty in getting them to look like a pancake rather than a weird scrambled egg by the time it gets out of the pan. My tips are only use a small to medium sized banana and give the pan time to heat up.     

The ingredients list below is for 1 pancake. Enjoy 

Ingredients

1 teaspoon of coconut oil

2 organic free range eggs (Ideally from a farm you know)

1 banana

1 large handful of blueberries

Method

Heat the coconut oil in a medium sized frying pan.

Mash the banana in a bowl and crack the eggs in to the bowl mixing together.

Pour the mixture into the frying pan as if making an omelette. Sprinkle the blueberries on top and allow to cook for around 5 minutes.

Once ready, fold the pancake in half to finish cooking and serve.

These pancakes go great with peanut butter!
